We’re excited to announce that we’re collaborating with The Salt Box and Daylands Farm this bonfire season to bring you the best wild game our countryside has to offer. Wrap up warm and join us as we head into the woods to gather together and give autumn a warm welcome.
Start the celebrations with an autumnal cocktail around the fire before sitting down together to enjoy a hearty five-course, wood-fired feast set beneath the stars. Ingredients are foraged, seasonal or wild and all are locally sourced from the very best of Sussex farmers and producers.
Rabbit, gin and lemon sausage rolls w/ bacon marmalade
Venison ragu, coal-baked potato gnocchi and pangrattato
Planked trout w/ chicory, fennel and orange salad
Pigeon saltimbocca w/ celeriac salad, pickled wild mushrooms, squash ketchup toasted hazelnuts
Spiced poached pears w/ amaretti crumble and vanilla mascarpone
